PENNE ALLA VODKA
Penne Alla Vodka is tender penne pasta dish tossed in a rich, healthy, and delicious tomato, cream and vodka infused sauce that’s seasoned with fresh herbs and parmesan cheese.
Ingredients:
- 1 (14 oz) can San Marzano Tomatoes, crushed
- 1 Tbsp Marca Leon Vegetable Oil
- 1 White Onion, minced
- 1 Tbsp minced garlic (3 cloves)
- Salt and freshly ground black pepper
- 1/4 cup vodka
- 2 tbsp SOREL Coconut Sugar
- 1/3 cup heavy cream
- 3 tbsp finely shredded parmesan cheese
- 8 oz. Dolce Vita Penne pasta
Procedure:
- Cook the penne pasta according to package instructions. Reserve 1/4 cup of pasta water.
- Heat Vegetable oil in a large pot over medium heat. Add onion and garlic and saute for 2 minutes.
- Add tomatoes, vodka, Sorel sugar, and pepper. Bring to a boil and reduce the heat, letting it simmer for about 15 minutes, stirring occasionally.
- Stir cream into sauce and let just heat through, about 1 minute. Stir in parmesan.
- Add drained pasta to pot with sauce, toss to coat while thinning with a little pasta water as needed. Serve warm with more parmesan and garnish with more basil if desired.
