KALABASA AND CORN FRITTERS with Garlic Yogurt Dressing

Simple, seasonal, and versatile. Enjoy this healthy recipe for extra crispy Kalabasa and Corn fritters with garlic yogurt dressing for dipping! These fritters are packed with yummy flavors, perfect for merienda or even for your midnight snack.


  • 1 cup cooked Marca Leon Polenta Bigas Mais
  • 2 medium eggs
  • 1 cup kalabasa, grated or finely chopped 
  • 1/2 cup carrots, grated or finely chopped
  • 1 small onion, finely chopped
  • 1/4-1/2 cup all purpose flour 
  • Salt and pepper, to taste 
  • 2-4 tbsp Marca Leon Vegetable Oil, for frying

Dipping sauce:

  • 1/4 cup plain yogurt
  • 3 cloves garlic, finely chopped
  • 1/2 tsp salt 


  1. Mix all ingredients except for the oil in a large bowl. 
  2. If the mixture is too wet, add more flour as needed. 
  3. Form into thin patties the size of the palm of your hand.
  4. Heat a large skillet with oil. 
  5. Pan fry the fritters about 3-4 minutes on each side, until crispy. 
  6. To make the dipping sauce: Mix all ingredients in a bowl and set aside. 
  7. Serve your fritters with the dipping sauce on the side. Enjoy!
