MOLTEN LAVA CAKE

Molten chocolate lava cakes are rich individual chocolate cakes with oozing molten centers. These are the ultimate decadent dessert! Simple, quick and easy to make at home with just a few ingredients.
Ingredients:
- 90g bittersweet or semisweet chocolate
- 3 tbsp (45g) unsalted butter
- 4 tbsp SOREL Coconut Sap Sugar
- 1 large egg
- 1 large egg yolk
- ⅛ teaspoon kosher salt
- 2 tablespoons all purpose flour
- 1 tbsp Confectioners' sugar
Optional: Ice cream or whipped cream, to serve
Procedure:
- Preheat the oven to 450°. Butter and lightly flour two 6oz ramekins. Tap out the excess flour.
- In a double boiler over simmering water, melt the butter and chocolate. Set aside once melted.
- In a medium bowl, beat the eggs, egg yolks, sugar and salt at high speed until thickened and pale.
- Whisk in the flour until smooth.
- Slowly fold in the chocolate mixture with the egg mixture, just until incorporated. Do not overmix!
- Spoon the batter into the prepared ramekins and bake for 10 minutes, or until the sides of the cakes are firm but the centers are soft.
- Let the cakes cool in the ramekins for 1 minute. Use a small knife to loosen the edges of the cake from the ramekin. Place a plate over the ramekin and carefully invert the warm cake.
- Dust the cake with confectioners’ sugar and serve with ice cream or whipped cream.
